New toy! My Nikon D5500

Playing around with my new Nikon d5500, I'm not a pro but this camera has All the bells and whistles with room to grow for what I need. I am able to easily share photos with the built in wifi which mean Better pictures of my kids, my food and cards that I share with you all and best of all its light weight and more portable but it still feels durable.

Recipe to yuca con chicharron



Malibu and pineapple juice with a plash of grenadine.

Yuca con chicharron(one of my favorite Honduran dish) 

How to make: 
1. Cook the chicharron or buy it made in the Mexican market (to make put water and lots lots, lots of salt with pepper and pork rinds in big pot -I make my own pepper btw- if making chicharron at home the water helps the fat release and eventually fry it self from the fat) 

2. Boil yuca in the meantime then fried (although in picture it shows I didn't fry because I didn't but suppose to be fried)

3.chop cabbage 

4. Central American dry cheese 

5. Make the sauce, 2 cans of tomato sauce, one spoonful of sugar, add alittle Heinz ketchup, 4 garlic cloves, Diced red onion, cilantro boil it and add teeny bit of water -less than 1/4 of a cup- When done drain and use the sauce. 

6. Assemble: 
Chicharron and yuca add cabbage on top, sauce and cheese

So acouple of days ago I burn my left arm pretty bad along with my right arm
And chin. Needless to say my left arm is the worse and feels tender from the tetanus shot.

Fresh farm eggs and duck egg, I was told duck egg makes the best cakes. What do you all think?

New home, new state and finally my own hobby room



We have officially move again to new home and new state but I FINALLY get a hobby room to call my own. My room will have to wait on decorations and new furniture Since we have a lot to unpack.

Our children enjoy our Disney world vacation. Our highlight of our trip was dinner with Cinderella, step Sisters and step mom. My magical moment was when a cast member heard me telling my family I lost my mimmie ears I bought 7 years ago in Disney California she gave me new mimmie ears

Chiles Rellenos  My dinner tonight 

With a teeny alteration from original recipe but still delicious and easy 

-poblano peppers 
-queso fresco(my fave, you could also queso de cojita or Monterry jack) 
-eggs whites and yolk separated 
- cilantro 
-onion (I use very little not an onion person even thought I cook with it)
- 2 tomatoes 
-green bell pepper
-pepper (I make this home made more flavor and bold)
-salt 
-sofratio sazon (on,y because it contains achote and culantro) 

~On gas stove but I don't have gas so I make due with glass top, put the serano pepers on burner to blacken them, keep an eye on them rotate them(they will look burn) 
         ^Then put the blacken serano pepper in a towel, bag or plate with lid to steam them so the skin will soften(I've tested all three method and they all get the job done)

~After serano peppers are steam remove skin with hand or paper towel(paper towel faster) when skin remove cut a slid on the serano Pepper  remove the seed(optional you can keep seeds but I remove them) set aside 

~In stand mixer (easier but you can use a hand mixer) use the balloon attachment froth the egg white until it forms peak 

~While the egg white froth in stand mixer I chop one tomato finely, chop cilantro finely and chop a little green pepper finely set aside in a plate

~On the blender(I used the Nutri ninja) and blend one garlic, one tomato, some cilantro, onion  and green Pepper.

~In pan heat some oil just a little  add some flour  (1teaspoon or more to make it thicker)  finely chop cilantro and  green bell Pepper
         ^ Ok, add the mixture from blender onto the pan with oil and finely chop ingredients add salt, Peper and half packet sofraito zason (gives it a red color and flavor) put on low but mix it 

~Check on egg white after peak pour egg yolk and keep frosthing (some like to fold the yolk more work but both ways works) 

~Have a another pan with oil to fry the serano pepper 

~Have a bowl with flour for serano pepper

~Turn off the frothed eggs, 
  ~Stuff the serano with the queso(cheese) 
  ~Roll  serano Peper In the flour
~Then dip it on the egg 
~Fry it with the slip side up first 

After all serano peper is fried add it to sopita(soup mixture) let it boil turn off stove and serve.

It has been awhile since I why last post. How are you all? My new year has been full of blessing but stressful with a new job aportunity for my husband that means we must move once again out of state. Here's a beautiful picture of this orchid my son teacher will receive for valentines.
